Breakfast Burritos
Ingredients:
12 Whole wheat toritilla wraps
1 dozen eggs
1cup diced sweet pepppers
1/2 cup shredded cheese
1/2 lb favourite breakfast meat ( bacon ham sausage)
Salsa ( optional)
- Prepare the meat according to directions ( I like to cook the meat in the oven while I scramble the eggs)
- In a non stick fry pan lightly cook the onions and peppers,
- In a bowl whisk the eggs well and add to fry pan.( reserve 1/4 cup eggs) reduce heat and stir continually.
- When eggs are cooked, add cheese and meat.
- Divide the mixture evenly between the tortilla wraps, placing the mixture 1/3 of the way from the bottom edge, fold the end over the mixture and fold in sides . continue rolling.
- Place burritos on a parchment paper cover baking tray, brush with remaining eggs and bake at 350 untill slightly golden , about 8 mins.
- When cool individually wrap burritos and freeze.
defrost over night in fridge or in the micro wave, reheat in micro wave 1-1.5 mins once thawed, or oven 5 mins.
